The wines of Santorini are getting plenty of attention these days. Not only does the island, nestled in the heart of the Aegean Sea, provide a stunning backdrop, its volcanic terroir is uber cool right now. 70% of the plantings on Santorini are given over to the [Assyrtiko](/assyrtiko) grape, from which the appellation's most wines are produced in a dry style. Additionally, production rules allow for [Assyrtiko](/assyrtiko) to be blended with the aromatic [Athiri](/athiri) and the delicate [Aidani](/aidani). A more traditional Vin Santo is also made on the island. The dry, mono varietal expressions of Assyrtiko that Santorini has become famous for exude freshness and minerality. Often though, they are full bodied and characterised by strong citrus aromas. Historically these island wines were consumed young, but as their reputation has slowly spread and wineries have put the experience of few more commercial vintages behind them, there is an increased understanding of just how well these wines can age.
